Caribbean Halibut

“I learned about this from a fisherman in Belize – Quick and Easy and Very Tasty”

Ingredients

  • 2 pieces fresh Halibut
  • 2 Tablespoons Mayonnaise
  • 1 Bell Pepper (any colors)Add season salt (or my favorite TJ spice – basil, seasalt, parsley, onion) 

Preparation

  1. Place the halibut in a piece of tin foil
  2. Add a light layer of mayonnaise (I don’t like mayo but this is for moisture and is great)Add season salt  (or my favorite Trader Joes  spice – basil, seasalt, parsley, onion) 
  3. Top with strips or pieces of bell pepper (any color)
  4. Bake at 300 degrees for  25 to 30 minutes or put on the grill for 5 to 10 minutes

Tips – 

You can use defrosted frozen fish and substitute Halibut for your favorite fish.
